Rehydrating Dried Shittake Mushrooms

Dried shiitake mushrooms contain all of the flavor of their moist counterparts, all they really lack is the water. In the process we'll also make shiitake flavored stock that's great for soups and other recipes.

The first thing you want to do is put the dried shiitake mushrooms in a large bowl of water and rinse them as thoroughly as possible.

Next dump out that water and refill the bowl with clean water. You're going to let them soak for about 6 hours to absorb water and rehydrate. Now, you'll notice that dried mushrooms float pretty good so you're going to need to find something to hold them under the surface of the water. This isn't necessary but it will take a lot longer to rehydrate them otherwise. Typically a small pot lid works well.

After the mushrooms have soaked for 6 hours or so they should be rehydrated. You'll still want to wipe of any dirt and grime that may be in the gills of the cap. Also, the water the shiitakes have been soaking in now contains some of the flavor of the mushrooms themselves. You can cook this down into a stock for soup or a delicious sauce.
